The nutritional value of the potato:

The main nutrient in the potato that provides energy is carbohydrates, which are found in the form of starch and serve as the primary source of energy for the body. They also contain a small amount of protein. Although this amount accounts for less than 10% of the daily requirements for an adult, potatoes are a good source of the amino acids lysine and tryptophan and, when combined with milk or eggs, provide a high-quality protein food.

Furthermore, they contain significant dietary fiber which contributes to the feeling of satiety and promotes the healthy function of the gastrointestinal system.

Rich in vitamins, such as Vitamin C, which is essential for maintaining healthy skin, teeth, gums, muscles, and bones and contributes to the absorption of iron from plant-based foods, and B-complex vitamins (such as niacin, thiamine, riboflavin, pyridoxine) which help in the metabolism of carbohydrates and proteins, as well as in the regulation of cholesterol action.

The introduction of potato cultivation in Greece is credited to Ioannis Kapodistrias. According to urban legend, when the Greek people initially met the potato with indifference, Kapodistrias ordered shipments to be unloaded ostentatiously at the Nafplio docks and placed under strict guard. Seeing the guards, the public assumed the potatoes were of immense value. Slowly, people began attempting to "steal" them with the silent approval of the guards, who had orders to look the other way. Soon, the entire shipment had been "stolen," and the introduction of the potato to Greece was a success!

Potatoes Au Gratin

Ingredients:

  • 5–6 potatoes, sliced into rounds
  • 1 cup fresh milk
  • 200g heavy cream
  • 1 egg
  • Grated Kasseri or Gouda cheese or sliced
  • Bacon bits
  • Salt-pepper

Instructions:

Layer the potatoes in a No. 28 baking pan after seasoning them with salt and pepper. Between the layers of potatoes, add the kasseri or Gouda and the bacon. Mix the milk with the cream and the egg and pour it over the potatoes. Bake at 200 degrees with the potatoes covered with aluminum foil for 30 minutes, and without aluminum foil for another 30 minutes.
